Thanks to the Recipe Girl and Food & Wine for this amazing recipe! One of those recipes on Pinterest that really worked out great! You know, I was doing so good on my New Year’s Diet and Exercise routine….. until last night! I made these bad boys up for Family Night, and now the diet thing is a hopeless cause until the pan is emptied. They are really, REALLY good! What’s not to love? Cookies on the bottom, chocolate filling in the middle, and more cookie on the top? That’s three layers of deliciousness!
Maybe I should freeze the leftovers in an attempt to keep from eating them all day long!
Prepare the Filling:
2 C chocolate chips (I used half semi sweet and half milk chocolate)
1 14 oz can sweetened condensed milk
2 tsp vanilla.
Place in a small saucepan over low, low heat. Keep stirring until nice and creamy!
Prepare the Cookie Dough:
1 C (2 sticks) butter
1 C brown sugar
1/2 C granulated sugar
1 TB vanilla
Cream the butter and sugars together until creamy. Ad the eggs and vanilla. Beat well. Stir in the following dry ingredients:
2 C flour
1 C quick oats
1 tsp baking powder
1 tsp baking soda
1 tsp salt
More chocolate chips.
Spray a glass baking dish with cooking spray and spread about half the dough onto the bottom of the pan. (You might have to use your hands and “pat” dollops of dough in the bottom of the pan until it is covered with dough). Pour the cooled chocolate mixture over the bottom half of the dough. Then add small dollops of the remaining dough on top. Just spread it together as much as you can. It’s alright if some of the chocolate peeks through!
Bake until lightly browned for about 25 – 30 minutes. You will need to cool completely before you can cut it into bars.
